Beef producers who sell their meat directly to consumers can boost their profit margin by up to 8% simply by following the step-by-step instructions in a new EBLEX guide.
The ‘Simply Delicious New Cuts’ publication, which is being offered to beef farmers who sell directly to the public, profiles a range of beef cuts which are already doing well in the foodservice sector and increasing in popularity in the retail market.
Using seam butchery techniques, EBLEX has worked with five primals to develop the range of new cuts taken from the thick flank, topside, rump, feather and chuck roll. The alternative cuts not only improve eating quality but also the consistency of the meat.
As well as detailed cutting specifications for each new cut, the brochure includes a costings guide to assist producers when working out margins.
Cost calculators demonstrate that by using seam butchery techniques to butcher a beef carcase, as opposed to more traditional methods, retailers stand to benefit from an enhanced margin of around 8% for rump and thick flank, just over 6% for topside, just under 6% for feather and 4% for chuck roll.
Retail project manager for EBLEX Mike Whittemore said: “Although seam butchery methods do involve slightly more preparation time, there are significant margin improvements and businesses really stand to benefit commercially.
“Not only that, but customers will also enjoy an enhanced steak eating experience as these butchery methods produce a more consistent product with less fat and gristle and therefore less plate waste. It’s a win-win situation all round.”
