Creating a profitable and sustainable demand for beef and lamb inevitably includes stimulating demand in overseas markets. In 2011, exports of fresh, frozen and processed beef and lamb totalled £851 million, a 25.7 per cent increase from 2010.
Looking at exports of livestock products more widely and including associated products like hides, skins and offal, the figure could be as much as £2.3 billion.
